Val's 100% Whole Wheat Bread Recipe

I'm re-posting Val's recipe for her whole wheat bread because I just spent like 20 minutes searching through the posts in her OLD blog to find it! :) I've made it before and it is amazing, and I need to be able to find this recipe, so I'm putting it on my blog so I'll know where it is! Thanks for posting it a few years ago, Val! :)

100% Whole Wheat Bread

To start. . . .
3 Tbsp. yeast
4 cups warm water
4 cups hard white wheat (or any wheat/combination you would like)
1/2 tsp. sugar

Mix these ingredients together and let sit until double. (Usually 15-30 minutes) This step is called a sponge and is very important to allow the yeast to get a head start.

Add. . .

1/2 cup oil or butter
2/3 cup honey or molasses
3 teaspoons salt

6-8 cups hard white wheat (or any wheat/combination you would like) CAUTION: the amount of flour can make or break this recipe. Don't add too much. . . . add a little at a time until you have a good dough that's not too tough.


Mix this together and kneed for 15-20 minutes if kneading by hand. Place dough in oiled bowl and let rise again until double (30 minutes). Punch down and shape into loaf pans (or into rolls, breadsticks, ect. . ) Cover and let rise until double (30 minutes). Bake at 350 degrees for 25-30 minutes. Oil top of bread for a nice shiny hard crust or brush a little milk on top for a softer crust. Remember rolls don't take as long to cook.


I love this recipe because it's easy to follow and doesn't have a million ingredients so I can just use my food storage. If you've never made bread yourself. . .give it a try!
