My sister and I, on our domestic goddesses day a few weeks ago, went to the Farmer's Market and picked up a stack of recipes. We tried one that night for our delicious gourmet dinner, and I thought I should share with you--it was super easy and soooooo good! :) So here we go:
3 large green or yellow bell peppers, tops cut off, seeds and ribs removed.
4 oz. hot Italian turkey sausage, removed from casing (we used basil turkey sausage)
3/4 cup reduced sodium chicken broth
1 large plum tomato, chopped
2/3 cup cooked brown rice
1/3 cup chopped fresh basil
1/3 cup finely shredded smoked cheese (mozzarella, cheddar, or gouda)
Position rack in upper portion of the oven and pre-heat broiler.
Place peppers, cut side down in a large, microwave dish. Fill the dish with 1/2 inch water. Cover and microwave on high until the peppers are tender-crisp, 7-10 min. Place peppers cut-side up in a roasting pan.
Meanwhile, cook sausage in a large saucepan over medium-high heat, breaking it up into small pieces with a wooden spoon, until cooked through, about 5 min. Stir in broth, tomato, and rice; bring to a simmer, scraping up any browned bits. Cover, reduce heat to medium-low and simmer until the rice is softened but still moist, about 10 minutes.
Stir basil and half the cheese into the rice mixture.
Divide the filling between the peppers, then top with the remaining cheese. Broil until the cheese is melted, 2-3 minutes.
That's it. They are easy and super delicious! :) Enjoy!
