Delicious Pumpkin Cookies!


Just in case you need a little fall treat, my sister sent me this recipe for Pumpkin Cookies, and they are soft and DELICIOUS!!!  I cheated a little, and instead of making the glaze, I bought a tub of Cream Cheese frosting and just spread a tiny bit on them when they were still piping hot so it would melt and be like a glaze, and it worked PERFECTLY!  :)

Soft Pumpkin Cookies

2 1/2 C flour
1 tsp soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp pumpkin pie spice
1/2 tsp salt
1 1/2 C sugar
1/2 C butter
1 egg
1 C pumpkin
1 tsp vanilla
1/2 c chocolate chips

Optional Glaze
2 c powdered sugar
3 tbsp milk
1 tbsp melted butter
1 tsp vanilla

Combine flour, soda, powder and spices in a bowl.  Beat sugar and butter together in another bowl.  Stir in pumpkin, egg and vanilla until smooth.  Add flour mixture a little at a time until blended smooth.  Add chocolate chips. Grease cookie sheet with spray on Pam or butter.  Drop cookie mix onto pan in large rounded tablespoons.   Bake at 350 degrees for 15-18 minutes or until edges are firm.  Cool for two minutes on wire rack.  Do not overcook, if you do, the cookie will be dry!  Makes about 3 dozen medium-large cookies.  Enjoy!

I made cookies like that. Except I put in craisins too and no glaze.
